What is your minimum booking size?We will quote for any size of event. In fact our style of service and staffing is ideally suited to larger weddings in the hundreds and as our package pricing is fixed the price per head reduces with larger events. We generally only cater for smaller events (<70) on Sunday to Thursday due to our wedding catering commitments at the weekends. We do have Pizza Buffet packages though for 50-80 guests (see Packages for cost/details).

Where can I sample your catering?We love our public pop-ups. Where the event diary permits, we try to have a regular pop-ups in the Angus area. These are hugely popular with the locals and as well as our pop-up menu, we always have some special pizza toppings on from our catering menu. Come along and try some pizzas directly from the van! All our pop-ups are promoted on our social media pages. Our brownies are available to order by post all over the UK too!

Are your insured?Yes we have £10M Public Liability Insurance and our staff are all trained in food handling and hygiene.

Can we request pizza toppings not from your menu?Of course, we're always happy to work with you to create toppings just for your event - we have lots of fantastic ingredients and plenty of ideas over and above those listed on our catering menu.

Can you cater for different dietary requirements?Yes. Our catering menu has a selection of both meat-based and vegetarian toppings, and we also have a few carefully crafted vegan toppings which are very popular. We can also customise any of our toppings to suit individual tastes and swap ingredients as required (e.g. dairy free cheese). Just ask, we're always happy to work with you to get the perfect toppings. We are regularly asked if we can make gluten free pizzas; We can do this for catering bookings if requested in advance and we know the number required. Due to cross-contamination risks (very important to coeliac customers), we make the GF pizzas at the beginning of service with clean utensils before we open any of the gluten products like flour. We can also work with you to accommodate specific allergens.

What is your minimum booking?Due to the logistics and work involved in preparing for any event (dough, toppings, staff etc.) and the time required at the venue, we have a minimum booking fee for our packages. These packages are listed on a priced on the website. It is important to advise that we provide a staffed full catering service and we are not a street-food van service. All prices ex VAT.

How do we pay?Once we have had a chat and agreed the basics (date, time, numbers, location etc.) we will send you an invoice which captures all the details. We request a 20% deposit to secure the booking and the balance to be paid in full 14 days before the event. Our bank details are provided on the invoice. We are VAT registered and our quote will include VAT.

What about your green credentials?For pop-ups and evening buffets, we use brown paper bags, paper or palm-leaf plates and plain brown pizza boxes (all recyclable/compostable). When disposable crockery is required we use compostable forks and biodegradable spoons. Where possible we rely on our onboard batteries and avoid using a generator. For our main catering packages we provide crockery and knives and forks.

Do you provide anything other than pizza?Absolutely! Coming from an Italian family, food is everything to us so we provide everything you might want from an Italian caterer for your event/wedding. We have a large selection of canapés (crostini), antipasti sharing boards (artisan meats, rustic breads, oils, balsamic vinegars and olives) and we can have our own staff serve these directly to your guests if required or add these to the buffet table. We can also provide Mediterranean leaf salads and both meat and vegetarian pasta salads to accompany pizzas for your buffet. We can offer hot pasta dishes too. We even have your desserts covered… Continuing our Italian family tradition and using equipment imported from Italy, we make our own Gelato which we can serve either in tubs or in waffle cones from our vintage ice-cream tricycle. This makes an amazing centrepiece for any event and we have an ever growing number of amazing artisan flavours for you to select from. For an alternative evening option we make the most amazing panuozzo. We'll even provide teas & freshly brewed coffees if required. Can you suggest wedding venues that are suitable for this style of catering?We are often asked by couples about the suitability of a venue for outside catering. Where are you based and how far will you travel?We are based in Angus, in the countryside north east of Dundee near a village called Kingennie. We have a loyal local following here in this area and try to support as many local business as possible both as suppliers and also by teaming up with them for pop-up pizza events. In order to offer the best value, we do prioritise booking requests for the East Coast of Scotland (Tayside & Fife) as these allow us to offer the best price per head. We do not generally cover areas such as Glasgow, Aberdeen The Highlands or Lothian due to the costs involved for staff time/travel and often accommodation. What is your availability ?2024 is pretty much full for daytime weekend weddings, however we can probably fit in some evening buffets at this stage. 2025 is filling up fast and we have opened our diary for 2026. Please just drop us an email with your date, venue and guest numbers and we will let you know our availability.

Do you supply everything required?Yes. We aim to provide you with a turnkey solution for your event. Our quotes are all inclusive of buffet/serving tables, tablecloths, napkins, crockery, cutlery, condiments and even a buffet gazebo if you need it. We can also help coordinate additional hire items for you. Please note that we don't set up guest tables in terms of tablecloths, place settings, name cards, flowers etc. This is the responsibility of the client. We will look after the buffet table setup. If you want plates, knives and forks on the guest tables then we will do this on the morning of the wedding once the tables and place settings are completed.

What do you need in terms of infrastructure from a venue?We built our catering van to be fully autonomous and we carry 50l of water on board for our cleaning/handwashing and electricity for our lights & fridge is provided from an onboard leisure battery. If power is available that is a bonus, especially for full day catering and when we have our gelato freezer. The horse box requires 6m of space when set up from towball to the back of the oven. Please also remember however that we need to be able to tow the horse box into position with our vehicle (either a large 4x4 or a van) and therefore require space to manoeuvre. A nice level area is ideal if possible and not on the public highway (as this introduces complications for local licensing and approval). Usually the venue car park is ideal. For full wedding catering we request an indoor catering space in addition for food preparation and equipment as we will only use the van for the woodfired pizza cooking.

How long does it take to cook a pizza?Our traditional wood-fired oven operates at 450 degrees and cooks pizzas in about 90 seconds. The oven is large enough to handle 6 pizzas at a time and it takes a couple of minutes to stretch the dough and 'dress' the pizza with toppings. An individual pizza takes about 4 minutes from dough ball to plate, however when we are catering for events we always achieve 70 pizzas an hour. Thats over 500 slices and hour! For weddings we use 3 ovens and a catering space to ensure we can provide dozens of hot pizzas at the same time every few minutes.

What style of service do you offer?Our catering is based on Italian Family Style dining. i.e. Informal sharing platters - perfectly suited for 'festival style' events and less formal weddings. Our main difference from street food vans is that we offer a fully staffed, rounded catering offering (everything from canapés, starters, sides, mains, desserts and even tea & freshly brewed coffee) all delivered by our experienced team of waiting staff. This allows us to specialise on the larger events (e.g. weddings of 100+ guests). We also own Artisana Exquisitely Decadent and can offer discounted wedding brownie towers and cakes. Please note that we do not offer a cook-to-order street-van service for private events & weddings (see reasoning below)

What about queues?We hate queues - they're not fun for us and they're not fun for your guests. This is why we have chosen a system of catering for events that addresses this. We agree with you the number of pizzas required and a selection of toppings (usually about 4 or 5) and we batch cook from this list. We set up serving/buffet tables either inside your venue or outside beside the van and we start off with 15-20 pizzas on the buffet table at the beginning of service. We then cook pizzas at the rate of 70/hour and we have a member of our staff who slices, plates and replenishes the buffet table until all the pizzas are cooked. All the pizzas are labelled to allow identification. We find that this works best as everyone can get pizza right away, even at large events. We will still be happy to take 'special requests' at the van for anyone who would like something to suit a dietary requirement. And we love when people come up to the van for a chat. We have provided buffets for 200 guests using this system with 4 sets of buffet tables.

How many people can you cater for?We have no real upper limit to how many customers we can serve. Although we are a small family business, we have worked hard at refining our processes and training our staff so that we can provide the best quality, fastest wood-fired pizza service. We use a team of 2-4 pizzaioli on dough stretching / toppings, 1 person managing the oven and 1-3 staff serving/plating and managing the buffet table. Or more if table service is requested. The same applies for canapes, sides, desserts and evening food buffets. We regularly cater weddings with 200 guests.

Do you charge differently for different toppings?No - we don't mind which toppings you choose. The only exception to this would be for a large number of GF or vegan pizzas due to the costs involved for the ingredients. (but a reasonable number can always be accommodated for no additional cost) Our Pizza Buffet Package 1 (50-80 guests) has a set menu of our most popular pizza.

How long will you be at the venue and when will you arrive?For daytime wedding catering we normally arrive mid-morning to unpack and setup, this means that we are out of the way before any guests/ceremony. Our staff will be busy cooking, setting up and serving throughout the day and clearing down and repacking usually around 10-11pm. For evening buffets, we usually arrive a couple of hours before service to set up the buffet and the ovens etc before cooking and serving for an hour or two as required. Then we have another hour to clear down and pack before leaving. All our quotes include these timings for a set number of staff and also include the travel time.
